The assessment focus upon a ‘fish’dish. You are to write a 1000-word standard operational procedure (SOP) for a vegetable risotto dish that is topped with pan fried seabass. This SOP should be unambiguous and be easy to follow for professionally trained chefs. Indicative content:
- Recipe ingredients for 2 portions
- Method for production
- Equipment and utensils required
- Highlight food safety good practices and Critical Control Points (CCPs)
- List the culinary skills required to execute the dishes
